Sweet Potato Bisque

Here, as requested is the recipe for Sweet Potato Coconut Bisque. The sweet potatoes give a really gorgeous color to this soup. As you’ll see, it’s very simple and quick, and a good way to use leftover sweet potatoes. You could sub heavy cream or half & half for the coconut milk, if desired. Add roasted chestnuts to your soup for a crazy amazing experience.

Sweet Potato Coconut Bisque
0.5 oz butter
6 oz onions, chopped
0.2 oz grated fresh ginger
2 lbs yams (baked until soft and peeled)
1/2 can coconut milk
4 cups water

Saute onions in butter until golden. Add remaining ingredients and simmer until heated through and thickened.
Add salt at as desired, and puree in a blender or food mill.
Taste for seasoning and thickness – this soup should easily pour off a spoon.
